Naturally Sweet Peanut Butter Cookies
Makes 36 cookies

1/2 cup whole-wheat flour
1/2 cup all-purpose flour
1/2 tsp. double-acting baking powder
1/2 tsp. baking soda
1/8 tsp. kosher salt
1/2 cup unsalted butter, softened
1/2 cup all-natural chunky peanut butter
9 packets Stevia Extract In The Raw
1 large egg, beaten
1/2 tsp. pure vanilla extract
Preheat oven to 350 degrees Farenheit. Combine whole-wheat flour, all-purpose flour, baking powder, baking soda, and salt in small bowl; set aside.
Beat together butter and peanut butter until smooth using electric mixer in large mixing bowl. Beat stevia into mixture until blended. Add egg and vanilla, and beat until just blended.
Shape dough into 1-inch balls. Set balls two inches apart on ungreased cookie sheet. Flatten, and make crisscross pattern in each cookie with fork.
Bake 10 to 12 minutes or until golden. Remove from oven, and cool on wire rack. Store in tightly covered container.
